綠茶為不發酵茶,所以保有了茶葉中原始的天然成分,綠茶之加工是採新鮮茶菁嫩葉,不經任何發酵處理,進廠後就立即殺菁(殺死酵素活性,使茶菁化學成分不再進行氧化作用)而製成,保留了新鮮茶菁最原始之風貌。
